Herbed Schnitzel

Ingredients

– 600g chicken breasts (or protein of choice)

– 3-4 tbs Evropes kitchen Mediterranean Spice Mix

– 1 cup flour

– 1 egg

– 125 ml milk

– 1-2 cups panko breadcrumbs

– Salt and pepper to taste

– Oil for frying

– Salt and Pepper to taste

Method

  1. Slice chicken in half through the middle.
  2. Cover with plastic cling or baking paper and using a rolling pin, flatten to even out the chicken.
  3. Sprinkle both sides of meat with the EK’s Mediterranean spice mix.
  4. Set up crumbing station by adding panko in one tray, flour in another with 1Tbs spice mix.
  5. In a bowl add egg and milk whisked in a bowl until combined.
  6. Coat meat first in spiced flour, then the egg mix and press into the breadcrumbs. Set aside onto another plate and repeat.
  7. Heat up a fry pan on medium-high heat and add oil
  8. Add the end of your schnitzel piece or some loose crumbs to see if oil is hot enough.
  9. Add schnitzel and cook for about 3 minutes each side until a golden brown colour and turn over and repeat.
  10. Once cooked, transfer to plate lined with paper towel to drain excess oil
  11. Repeat with remaining pieces.
  12. Serve with lemon wedged and sides of your choice.
