Chicken Burgers

Chicken Burgers make a fantastic option for a quick meal during the week or a summer BBQ! Using Evrope’s Kitchen Mediterranean spice mix to seasoning to fry or grill your chicken. The spice adds a beautiful looking crust. Top off the burger with avocado, herbed mayonnaise, lettuce, tomato and melted cheese inside of some Turkish rolls. Serve it alongside some chips or salad.
To change it up, switch the up the rolls with some soft pita bread for a delicious lunch.

Ingredients

– 500g chicken breast fillets (cut through the middle to make 2 thin slices)

– 2 TBS olive oil

– 3 Tbs Evrope’s Kitchen Mediterranean Spice Mix

– 4 slices of Swiss cheese

– 2 tomatoes

– 1 avocado

– 1 tbs lemon juice

– 1 medium red onion

– Butter lettuce

– ½ cup Herbed mayonnaise (or favourite mayo of your choice)

– 4 Turkish rolls

– Optional: 6 slices of middle bacon

Method

  1. If using chicken breast, slice chicken threw the middle horizontally, to make 2 thin slices per fillet.
  2. If needed, with a meat cleaver or rolling pin, pound the chicken breast until it is about 1 cm thick.
  3. Add EK Mediterranean spice mix onto the chicken and mix until evenly distributed.
  4. If adding bacon to your burgers, fry the bacon first on the pan on medium heat until cooked. Set aside. You can leave the bacon fat in the pan if you want to cook the chicken with it. If you do that, add 1 TBS less of olive oil to your pan.
  5. On a medium-high heat, add 2 tbs of olive oil into your pan and cook for about 2-3 minutes until golden on one side, the flip and repeat. If adding cheese add the cheese on top of your chicken halfway through while cooking in the pan to allow it to melt.
  6. Remove chicken and set to the side

Vegetable Prep

– Mash avocado using a fork and add lemon juice into the avocado mix with salt and pepper to taste.

– Prep and slice your onions, tomatoes and lettuce.

– Split open your rolls and lightly toast if desired

Assembling

– To the bottom roll, spread the avocado and top with the chicken, bacon (if adding) lettuce, tomato and onion.

– Add the herbed mayonnaise to the top roll before placing on top of your burger

– Enjoy on its own, or you can serve with chips, wedges or a side salad.
